Oleoresin is a highly concentrated form of semi-liquid preparation extracted from certain plants or spices consisting of fixed or volatile oil holding resin in solution. For this reason oleoresins are the preferred spice extract used for flavouring purposes. The oleoresins are produced by extraction of the dry spices with an organic solvent / solvent mixture.
