Kernels of raw almond from quality origin are graded to obtain uniform sized nuts. The graded almonds are soaked in brine solution under controlled conditions to ensure uniform soaking and salting. The almonds so treated are drained completely. The product is slowly dry roasted and there after cooledat predetermined rate to retain the natural taste of almonds.Fine spray of oil is applied to retain natural taste and appearance.
