Emulsion is basically, a dispersion of droplets of one non-miscible liquid into another which include water and oil. The absence of an emulsifier separates the two liquids. These are absorbed between two liquids and form a film. The film is initiated because of their structure, polar part of the emulsifier molecules that have affinity with water and the non-polar part are inclined towards the fatty phase. Emulsifiers force one liquid into the other in the form of separate drops, by suspending and dispersing the other into the previous liquid.
These are kept away from each other but, stored as a stable mixture.

Emulsifiers are used to make two components such as water and oil compatible. It acts as an interface between the conflicting components and used as edible for preparing different foods. Chemically, an emulsifier is a molecule with one oil-friendly end and one water-friendly. The droplets of oil are surrounded by the emulsifier molecule, with the oil core hidden by the water-friendly tails of the emulsifier. A classic natural emulsion is milk, which is a complex mixture of fat suspended in an aqueous solution. Nature's emulsifiers are proteins and phospholipids. Egg is also commonly used as an emulsifier.
Our emulsifier is prepared by using palm oil, rapeseed oil, soy bean oil, sunflower oil or lard/tallow.
